This gluten free Umami sauce is an excellent substitute for soy sauce and Worcestershire sauce.It is free from gluten (and can also be made soy free) and is a lot cheaper to make than the equivalent gluten free sauce costs to buy.

Capturing the perfect Umami (a distinct pleasant savoury taste) depends on your own personal taste preference so the quantities in the recipe below can be adjusted until you reach the flavour you desire. The sauce will subtly mature in flavour and richness over a few days and can be kept in a bottle in the fridge for up to six months.
