This gluten free sizzler salad is a fabulous way to use up left overs as it is designed to be eaten cold and can be easily scaled back to make the right amount for lunch for one.
I like to prepare it in a mason jar and pop it in the fridge the night before for a quick grab-and-go power lunch. Men tend to love this salad too as it has no “rabbit food” i.e. lettuce in it!
