In fall (autumn) in America all things pumpkin are celebrated, and this gluten free pumpkin pecan pie pancake recipe was inspired by a dish I saw being served in a diner there. 

It combines pancakes with the flavours of pumpkin and pecan pies to create a breakfast like no other, delicious and warming laced with spices, nuts and sweet maple syrup served with smoked bacon on the side. You really must try them!
