These special bite sized treats are a take on the classic Italian Amaretti Biscuit.
As they don’t actually contain any Amaretti liqueur and can be made from scratch or from the leftover almond paste you will have after icing your traditional gluten free Christmas cake these gluten free amaretti biscuits are just as good. The proportions of almonds to egg white to sugar aren’t quite the same as the classic Italian recipe but it is a great way to upcycle almond paste icing that would otherwise be taking up space in the fridge while you pondered what else to do with it. Though these gluten free amaretti biscuits are so tasty and keep very well that you might be tempted to just make them from scratch using the almond paste icing ingredients and directions.
