Since my diagnosis I have tried many recipes both with purely substituting gluten free flour mixes and other gluten free recipes. I have had very mixed results with both which can be very disheartening. So far I have only tried the blueberry muffin recipe from your book. “The cherry and coconut cookies were yummy, good texture and taste and they were not as hard as rocks like often gluten free things are. My husband said they are the nicest gf cookies he has had! I tried the Dainty Cookies too, with jam on the top, and these too were a success. Both biscuits were still nice a week later. The chocolate brownie was very moist, I had made it with carob though but it froze well and so my hubby that likes his pudding could defrost a piece and have it with gf icecream!
