“I purchased your cookbook last week. I was diagnosed with Coeliac disease a year ago. Prior to my diagnosis I was a regular home baker. Since my diagnosis I have tried many recipes both with purely substituting gluten free flour mixes and other gluten free recipes. I have had very mixed results with both which can be very disheartening. So far I have only tried the blueberry muffin recipe from your book. It was the nicest recipe I have come across since being gluten free and I would go as far as saying one of the nicest blueberry muffin recipes I have ever baked (and there have been many over the years!). My two children (one who is gluten intolerant) wolfed them down as did my gluten eating husband. They were so nice I made a second batch today! Same reaction. “The cherry and coconut cookies were yummy, good texture and taste and they were not as hard as rocks like often gluten free things are. My husband said they are the nicest gf cookies he has had! I tried the Dainty Cookies too, with jam on the top, and these too were a success. Both biscuits were still nice a week later. The chocolate brownie was very moist, I had made it with carob though but it froze well and so my hubby that likes his pudding could defrost a piece and have it with gf icecream! I have tried lemon meringue pie and this was simply heaven!!! The base, filling and meringue. Well done on a book with very successful gf recipes. I don’t bother to bake anything other than gf now, I just eat gf myself too, makes things more simple!!”
