Tauranga, New Zealand – One of life’s simplest pleasures is eating food that is both visually appealing and packed so full of flavour that each bite is a delight to the taste buds. As those who are Coeliac or gluten intolerant know, this can be a challenge when eating gluten free, as it seems as if all the foods you once used to enjoy eating are now off limits to you, especially baked goods like bread, pies, pastry, cakes, muffins and cookies. But not any more as its apparent the authors of Goodness Me it’s Gluten Free had all this in mind as they have carefully crafted each recipe in their cookbook so that gluten free baking will once again satisfy this simple pleasure.
Goodness Me it’s Gluten Free contains something to fulfil every craving from sweet treats through to savoury pies and quiches from the pastry section. Parents will be pleased to see recipes that are ideal for lunchboxes, snacks and kids parties. There’s also a whole chapter dedicated to bread, buns, sandwiches and pizza. Surprisingly, all the recipes in the book can be made from only two flour blends (for which recipes are provided), using gluten free flours that are readily available in supermarkets and “bulk bin” shops. Those with other allergies are not forgotten either as all the recipes are free from gluten, wheat, soy, potato and nut flours and many can be made dairy and/or egg free too.
Goodness Me was established in 2008 by mother and daughter Mary & Vanessa Hudson whose family first encountered the need to eat gluten free because of a Coeliac diagnosis more than 12 years ago, and the subsequent discovery that in fact ¾ of their family were affected with varying degrees of gluten intolerance. As you can imagine, this diagnosis threw their family’s eating habits into chaos. Everywhere they shopped they were confronted with an array of foods that they could no longer eat, a simple trip to a café or trying to grab “food on the go” was filled with frustration, and packed lunches… “well, who could stomach the thought of the crumbly, cardboard or brick like, gluten free bread that was on offer back then? Not us!” Vanessa says. They briefly entertained the idea of a lifetime of denial and avoidance of gluten containing foods, but being foodies at heart who loved baking they were not content to simply give up eating the things they had once enjoyed. So they embarked on a quest to create delicious, satisfying, gluten free baked goods that are as much of a joy to cook as they are to eat. Initially Goodness Me made gluten free bread and baking mixes according to a secret family recipe, which were sold through their online shop www.goodnessme.co.nz. But over the years they’d developed so many tasty recipes for baked goods they decided that writing a cookbook was the best way to share their secrets.
