I find gluten free rhubarb and ginger muffins a useful standby muffin when fresh berry and stone fruit is out of season, as rhubarb grows easily almost year round in the garden.

So at the drop of a hat almost any time of year these can be whipped up for something to go with morning or afternoon tea. Ginger is a perfect match with rhubarb and I just love an intense ginger flavour so use root ginger rather than powdered ginger in this recipe.
