An email from a friend came saying how easy it was to make this fruit cake as it has only three ingredients – dried fruit, flour and tea.
There’s no added sugar, no dairy and no eggs! So this gluten, dairy, egg, nut, soy and sugar free fruit cake has surely got to be good for you, especially as we have adapted it to work with gluten free ingredients.
This is a lovely dark fruit cake that can be dressed up for special occasions or enjoyed every day. It’s great in the lunchbox too. I have decided to call this a Freedom Fruit Cake as it is “free from” all of the top 8 food allergens.
