We have often been asked for a yeast free gluten free soda bread but various methods have been disappointing to our taste buds. Having recently studied the baking origins of soda bread, which was soon after adopted as a quick bread during the Irish Potato Famine, we were inspired to have another go and have been delighted with the results. This modern adaptation not only tastes delicious but it keeps impressively well over several days. It also toasts up wonderfully golden.
